What's a Ceramic Knife
What’s a ceramic knife?
Material:
Ceramic knife is a knife made out of very hard ceramic, often zirconium oxide (ZrO2; also known as zirconia). These knives are usually produced by compacting Zirconia powder using high pressure presses which apply a pressure of around 300 tons to produce blade-shaped blanks. These blanks are very brittle and fragile and can be shattered by a slight blow; special binders are used to retain the shape of the blank until the firing process. Like most ceramics these are consolidated into a dense and strong ceramic by solid-state sintering for 5-12 hours in a high-temperature furnace: approximately 1400 degrees Celsius. The result is a very hard and blunt blade which is then sharpened by grinding the edges with a diamond-dust-coated grinding wheel.Several brands offer a black blade made by an extra firing or sintering via hot isostatic pressing (HIP). This process improves the toughness of the blade, the key limitation to using ceramics in knife blades.
Advantages:
Advanced ceramic is second only to diamond in hardness. Long-wearing and corrosion-free, ceramic parts are often used in bone replacement procedures.
In fact, ceramic components are used in satellites, racecar brake pads and other applications that require extreme wear-resistance. For those components that would virtually disintegrate if made from metal, ceramic is the material of choice.
Zirconia is very hard; it ranks 8.5 on the Mohs scale of mineral hardness, compared to 6 to 6.5 for hardened steel, and 10 for diamond, giving a very hard edge that rarely needs sharpening. Ceramic blades can only be re-sharpened with a material harder than themselves; industrial grade diamond sharpeners are usually used.
Pure zirconium oxide is little used in industry due to its polymorphism. When heated from room temperature it goes through three phases: monoclinic, tetragonal, and cubic. Cooling to the monoclinic phase causes a large volume change, which often causes breakage. To alleviate this effect additives are utilized to stabilize the high-temperature phases and eliminate this volume change. Magnesium, calcium and yttrium are often used to stabilize the zirconium oxide; yttrium provides the best mechanical properties, yielding a characteristic mother-of-pearl appearance. The highest strength, and more importantly toughest, Zirconia is produced with 3 mol% yttrium oxide yielding partially stabilized Zirconia. This material consists of a mixture of tetragonal and cubic phase with a bending strength of nearly 1200MPa.
Ceramic knives will not rust, leading to their use by scuba divers. They are also nonconductive and nonmagnetic, which can be useful for bomb disposal operations. Their chemical inertness to both acids and alkalis and their ability to retain a cutting edge far longer than forged metal knives makes them a very good culinary tool for slicing and cutting through boneless meat, vegetables and fruits. Since they are very brittle they cannot be used for chopping, cutting bones or frozen foods or for any application which tends to twist the blade such as prying, which may cause the cutting edge to chip or the blade to break free from the handle. The tips of these knives are resistant to rolling and pitting, but may break if dropped.
Ceramic knives present a conceptual problem to the security industry since ceramics are not picked up by metal detectors. To solve this problem, many manufacturers of non-military knives include a quantity of metal in each knife to ensure they are detectable with standard equipment. Ceramic knives can be detected by extremely high frequency scanners (e.g. millimeter wave scanners), although (as of 2006) these scanners are not yet in widespread use.

How to Make a Fine Ceramic Knife

With proper care, JEM ceramic knives will held its sharpness for literally years without re-sharpening
* Rinse in warm water or gently hand wash using a mild detergent in warm water.
* Do not drop the knife as this can cause the blade to break.

Q: Why Ceramic instead of steel?
A. The blade is extremely hard – only diamonds are harder. Expect little or no wear and tear on the blade. It will cut and cut and cut again . . .like cutting butter. The blade does not rust, spot or – Heaven forbid – pit, because it isn't made of steel. Sensitive food items such as eggs or citrus fruit will not assume a strange metallic taste from the blade. The white ceramic blade is also made out of zirconium oxide but does not go through this expensive sintering process.
Q. How do I sharpen ceramic knives?
A. You can re-sharpen your ceramic knife with a powered diamond sharpening wheel.
Q. Will a ceramic knife break or shatter if I drop it?
A. No (with the possible exception of the tip). Zirconium oxide is a very strong material. Like a forged steel knife, however, you can likely break the tip if the knife lands on the tip. Fortunately, we can repair most damaged tips.
Q. How can I damage a ceramic knife?
A. Two ways. First, you can chip the edge if you cut into bones or use on a surface such as marble. Second, you can break off the tip or snap off the handle if you use it to pry. Please handle the blade carefully! Only wooden surfaces or the new plastic cutting boards are recommended. Surfaces of marble, glass, china or steel will impair the sharpness of the blade. Don't drop the blades on hard surface floors or use them as can openers. That's not included in their job description.
Q. How can I wash my ceramic knife and tools?
A. Ceramic knives and tools are very easy to clean with a quick wipe since food does not stick to them. Please do not wash them in the dishwasher. We do not recommend wash them in dishwasher since the dishwasher may be too rough and cause breakage .Violent motion against other objects, especially hard plates, could chip the objects and/or the ceramic knives and tools.

A. First, we mold ceramic powder into blade "blanks" using special high pressure (many tons!) presses. Special binders in the powder allow the blanks to retain their shape before sintering (or firing), which takes several days at extremely high temperatures (in excess of 1000¯ C). We then grind and polish the sintered blanks to form an edge and the final shape before attaching the handle.

Fruit(paring) Knife
It’s any knife that is designed to be used off the board, in the air basically. Small knife, used for delicate cutting, peeling, destemming strawberries, and such.
Utility knife
Utterly useless knife in the kitchen. Too short and narrow to be anything like Chef's or Santoku in the kitchen and too long to be a good pairing knife. Proponents of it say, it's excellent to cut sandwiches in half. So, if you do that all day, may be you should consider it, otherwise skip it for sure, and save money too.
As for the utility knives, they're one of the most useless kitchen knives. Too short and no knuckle clearance, to be useful for veggie chopping like chef's knifes or vegetable cleavers or nakiris.
Too long to be as good as paring knives for peeling/paring.
Santoku Knife
The Santoku knife has been called an Asian chef's knife in deference to its general utility at a variety of cutting tasks. The Santoku has a straighter edge than a chef's knife, with a blunted sheepsfoot-tip blade and a thinner spine, particularly near the point. From 12 cm to 18 cm (5 to 7 inches) long, a true Japanese Santoku is well-balanced, normally flat-ground, and generally lighter and thinner than its Western counterparts, often using superior blade steels to provide a blade with exceptional hardness and an acute cutting angle. This construction allows the knife to more easily slice thin-boned and boneless meats, fish, and vegetables.
Many subsequent Western and Asian copies of the Japanese Santoku do not always incorporate these features, resulting in reduced cutting ability. Some Western Santoku-pattern knives are even fitted with kullens, scallops on the sides of the blade above the edge, in an attempt to reduce the sticking of foods and reduce cutting friction. A standard in Asian (especially Japanese) kitchens, the Santoku and its Western copies have become very popular in recent years with chefs in Europe and the United States.
You'll never see Santoku in a pro environment in Japan, but it's very popular in households. Beats Nakiri in versatility and shorter/cheaper to compared to gyuto (Japanese chef's knife).
Slicing Knife
It’s used to cleanly slice peaces of meat and other soft food, often large. Because of that 6in long slicer sounds more like a joke. The idea of the slicer knife is to cut the piece in one (or two at most) slicing motion in order to have a cleanly cut surface on the slice.
Slicers don't work well as serrated bread knives, but vice-versa works better.
Chef's knife
General cutting, anything from soft meat to veggies. Can double as a slicer too, if it is long enough.
Remark:
5 and 7 inch is the blade length obviously. And 5 is too short too. Although, that's very personal, you have to decide for yourself.
Minimal set for home cooking is 8-12" long chef's knife + 3-4" paring knife and 10"+ long bread serrated knife. That will cover 99% of home cooking cutting. You can add boning knife or a slicer depending on your needs.
